A quick and delicious Cantonese Chow Mein recipe featuring fresh noodles and vibrant vegetables, ready in just 15 minutes.

- 250 g Chow Mein egg noodles
- 1 yellow onion, thinly sliced
- 2 spring onions, chopped
- 100 g bean sprouts
- 2 tbsp corn oil
- 1 tbsp sesame oil
- 3 tbsp dark soy sauce
- 1 tbsp regular soy sauce
- 2 tbsp oyster sauce
- 1 tsp fish sauce (optional)
- 1 tsp sugar
- 100 ml water
Instructions
- Bring a large pot of water to a boil and cook the Chow Mein noodles according to the package instructions until al dente.
- Slice the yellow onion and chop the spring onions into rings.
- Heat the wok over medium-high heat and add the corn oil.
- Add the sliced onions and the white parts of the spring onions to the wok. Sauté for about 2 minutes until soft and lightly browned.
- Include the bean sprouts and sauté for 1-2 more minutes until they are crisp.
- Add the drained noodles to the wok along with the dark soy sauce, regular soy sauce, oyster sauce, fish sauce (if using), sugar, and water. Mix thoroughly for 2-3 minutes until heated through and well combined.
- Finish by adding the green parts of the spring onions before serving.
Notes
Feel free to customize the vegetables and spices according to your preference. Ensure you stir frequently to prevent sticking.
