- 1 kg chicken pieces
- 2 large onions, chopped
- 400 g fresh tomatoes, diced
- 1 cup bell peppers (mixed colors), diced
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons vegetable oil
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- 1 teaspoon paprika
Instructions
- Heat oil in a large pot over medium heat. Add chicken pieces and brown them until golden.
- Add the chopped onions, garlic, and ginger to the pot and sauté until soft and fragrant, about 3-5 minutes.
- Stir in the diced tomatoes and bell peppers, simmering until tomatoes release their juices (about 5-7 minutes).
- Sprinkle the spices over the mixture and mix well. Pour in the chicken broth.
- Bring to a boil, then reduce heat to low and let simmer for at least 30 minutes, ensuring chicken is fully cooked and flavors meld together.
Notes
For richer flavors, prepare the stew a day ahead and store in the refrigerator. Reheating the next day will enhance the taste.
