Description

A rich and flavorful Nigerian chicken stew featuring tender chicken, fresh vegetables, and a harmonious blend of spices.


Ingredients

  • 1 kg chicken pieces
  • 2 large onions, chopped
  • 400 g fresh tomatoes, diced
  • 1 cup bell peppers (mixed colors), diced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions

  1. Heat oil in a large pot over medium heat. Add chicken pieces and brown them until golden.
  2. Add the chopped onions, garlic, and ginger to the pot and sauté until soft and fragrant, about 3-5 minutes.
  3. Stir in the diced tomatoes and bell peppers, simmering until tomatoes release their juices (about 5-7 minutes).
  4. Sprinkle the spices over the mixture and mix well. Pour in the chicken broth.
  5. Bring to a boil, then reduce heat to low and let simmer for at least 30 minutes, ensuring chicken is fully cooked and flavors meld together.

Notes

For richer flavors, prepare the stew a day ahead and store in the refrigerator. Reheating the next day will enhance the taste.
