Description

A colorful and flavorful blend of sweet pineapple, crunchy bell peppers, and jasmine rice, enhanced by the aroma of sesame oil for a tropical delight.


Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 cup fresh pineapple, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 3 green onions, chopped
  • 1 tablespoon sesame oil
  • 2 tablespoons reduced-sodium soy sauce

Instructions

  1. Cook the rice by combining jasmine rice and water in a cooker or pot. Bring to a boil, reduce heat, and simmer for 15-20 minutes until soft. Fluff with a fork.
  2. Prepare the vegetables by chopping pineapple, red and yellow bell peppers, and green onions into small pieces.
  3. Heat sesame oil in a wok or large pan over medium heat. Add bell peppers and green onions, sauté for 3-4 minutes until slightly soft.
  4. Add fresh pineapple and sauté for 2 minutes until caramelized.
  5. Mix in the cooked rice and stir everything together to absorb flavors.
  6. Stir in the soy sauce and heat for another 2-3 minutes.
  7. Serve hot as a side dish or light main course.

Notes

Rice can be prepared in advance and stored in the refrigerator. Reheat in the microwave or pan with a splash of water to regain moisture.
